LITTLE SISTER
La Gourmandise
Vinification
The Syrah and Cabernet Franc are handpicked in the middle of September and fermented as whole bunches (maceration carbonic). Three weeks later the Cabernet Sauvignon is picked, destemmed, and fermented according a traditional fermentation process at low temperature. The separate wines are matured for a short period in stainless steel, blended and bottled early May in order to preserve the juicy and super fruity structure of the wine.
Tasting Notes
Dark and deep purple ruby color. The nose is intense and very fruity with lots of black currents, black olive tapenade and a hint of spice. Super juicy on the palate, with aromas of fresh fruit. Long on the palate, with round and soft tannins.
Serve With
A wine for all seasons. Pairs well with barbecue, a good Sunday roasts, grilled chicken alongside autumnal vegetables and quinoa. And of course… ripe cheeses!

BIG SISTER
La Decadence
Vinification
Similar to its little sister, La Gourmandise, the Syrah and Cabernet Franc are handpicked in the middle of September and undergo a carbonic maceration. Three weeks later the Cabernet Sauvignon is picked, destemmed, and fermented according a bio-protection fermentation method at low temperature. The difference lies in the Cab-Sauv which gets matured for a year in Hungarian oak barrels that have been dry aged for 5 years.
Tasting Notes
Elegant, classy nose with well-integrated oak, and notes of dark fruits. Rich and full-bodied with a balanced structure and soft tannins, offering a lovely fleshiness and intensity where the oak is present but not overpowering an elegant balance between fruit and oak.
Serve With
Ideal for accompanying finely prepared cuts of meat, the likes of tender lamb chops or something more gamey, like duck or venison. Would pair beautifully with mushroom risotto, with a sprinkle of truffle and aged French Compté cheese.
