New kid on the block
Launching a new domain allows you to fine tune your identity and position within an appellation. In our case, this appellation is the gem of the Languedoc: the Cabardès. After many tastings, and brainstorming with various winemakers, we settled for a blend of Syrah, Cabernet Franc, and Cabernet Sauvignon, what we believe to be the magic ingredients of this appellation.









CABERNET FRANC & SYRAH
Carbonic
Maceration
With the aim of creating a fruit-forward and soft tannin wine, we decided that our Cabernet Franc and Syrah, which make up the majority of our Cabardès blend, deserved nothing less than the finest fermentation technique: Carbonic Maceration. This method involves carefully handpicking the grapes, allowing them to undergo both whole-bunch and intracellular fermentation.

CABERNET SAUVIGNON

Protection
The Cabernet Sauvignon is harvested three weeks later at optimal phenolic maturity. Before fermentation the Cab undergoes a long (6 day) pre-fermentation maceration aided by the use of non-Saccharomyces yeast cells. This method, called bio-protection, avoids the use of sulphites during the fermentation process.
The Syrah and Cab-Franc blend, and Cab-Sauv are both matured separately and blended just before bottling. The Gourmandise gets blended 10 months after the harvest, and the Decadence only after a year and a half, once its oak maturing is complete.
